Poudre de Colombo

Poudre de Colombo is a masala originated in Sri Lanka but became a widely used curry powder in the Caribbean region too.

Serves a cup of spice blend.

Poudre de Colombo

Ingredients

  • 1/4 cup white rice
  • 1/4 cup cumin seeds
  • 1/4 cup coriander seeds
  • 1 tbsp black mustard seeds
  • 1 tbsp black pepper corns
  • 1 tbsp fenugreek seeds
  • 1 tsp whole cloves
  • 1/4 cup ground turmeric

Preparation

  1. toast the rice until golden yellow (~5 min)
  2. toast the whole spices until fragnant (~3 min)
  3. grind the whole spices to powder once they cooled down
  4. mix with turmeric
