Poudre de Colombo
Poudre de Colombo is a masala originated in Sri Lanka but became a widely used curry powder in the Caribbean region too.
Serves a cup of spice blend.
Ingredients
- 1/4 cup white rice
- 1/4 cup cumin seeds
- 1/4 cup coriander seeds
- 1 tbsp black mustard seeds
- 1 tbsp black pepper corns
- 1 tbsp fenugreek seeds
- 1 tsp whole cloves
- 1/4 cup ground turmeric
Preparation
- toast the rice until golden yellow (~5 min)
- toast the whole spices until fragnant (~3 min)
- grind the whole spices to powder once they cooled down
- mix with turmeric
